Candidates receive theoretical training in detail on the following items:
- Overview of the standard beef processing and slicing
- Overview of personal tools and personal tool maintenance.
- Overview of personal hygiene and environmental disinfection.
- Quality assessment and hazard analysis in standard operating procedures.
- Indicate procedures and follow work instructions signs, and report accidents and emergencies.
Food packaging technology
- Overview of the beef industry and beef jerky standards.
- Knife sharpening technique.
In terms of practice, students can practice mixing beef directly from the time it is alive to packed.
- Distinguishing the fibers, muscles, and parts of cows
- Performing knife sharpening and knife holding.
- Storing knives when not in operation
- Recognizing how to slice each part of a cow.
- Manipulating or dissecting each part of the cow.
